Why has Wheat become the bad guy of food? I have often wondered this. Does anyone else think about such things? There are many instances in the Bible where wheat sustained entire nations for years. Joseph stored up enough wheat to feed Egypt and surrounding areas for a 7- year famine. What changed? The short answer is that Human Beings started messing with God’s creation.
Since the 1950s, wheat has been commercially grown and hybridized to where it is nothing like its original form. All for higher yields and higher profit. Then it is ground to a fine powder, packaged and sits in warehouses and on shelves for so long that it has absolutely no nutritional value. This is such a shame because fresh ground wheat is a nutrient power house. When I say fresh ground, I mean that once milled, after 72 hours all of the vitamins, minerals and protein disappears. This is why in Biblical times just enough wheat was ground to last for a few days.
Just some of what fresh milled flour contains:
Iron, selenium, thiamine, phosphorus, magnesium, niacin, copper, zinc, B6, folate, potassium, pantothenic acid, vitamin E, manganese, and very high in protein. Because of this, it does not have the same glycemic load as the bread that is sold under the “whole wheat” label.
Grain Mills are not cheap. They are an investment. I have had mine now for almost 10 years, so I have definitely gotten my money’s worth. It is “The Kitchen Mill” by Blendtec. Do your research on recipes. Some you will like, some you won’t. It may be an adjustment with the texture and taste of the bread, etc. because most of us are not used to the nutty more- dense texture and flavor of the real thing. But believe me, once you get used to it, you will be hooked for life. I started with pancakes. Now I keep a stash of them in the freezer at all times. They are a quick, “out the door-pop in the toaster” healthy breakfast, or a lazy Sunday morning covered in butter and maple syrup treat.
